
1 lb lamb or beef stew meat
1 can fire-roasted crushed tomatoes
3 Tbsp Tikka Masala seasoning
1 garlic clove, diced
1 half onion, finely diced
1/2 cup water or broth
1 can unsweetened coconut milk
Cut the stew meat into slightly smaller pieces. Place all ingredients (except coconut milk) in slow cooker on Low, and let cook for 6 to 8 hours. This will greatly tenderize the meat, and it will fall apart on your plate. About half an hour before serving, add the coconut milk, and prepare rice to enjoy with the dish. Serve with cilantro as garnish.
