A sturdy cut of meat, full of flavor, and ideal for stewing.
To make a beef stew, cut the chuck into 1 1/2 inch cubes and then seer in hot oil on all sides in a heavy pot. Remove the meat from the heat, add onion and carrots and your favorite herbs, along with broth and possibly wine. Reduce the liquid by half, and then return the meat to the pot. Continue cooking slowly for up to 2 hours, adding broth as necessary.
